Instructions

1.In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
2.Add 3 lbs of chicken, cut into pieces, and cook until browned on all sides, about 5-7 minutes.
3.Remove the chicken from the pot and set aside.
4.Add 1 chopped onion and 4 chopped garlic cloves to the pot and cook until softened, about 2-3 minutes.
5.Stir in 1 can of tomato paste and 1/4 cup of dry white wine, and add 3 cups of water.
6.Bring the mixture to a boil and then reduce the heat to low.
7.Add the chicken back into the pot along with 2 bay leaves, 1 cinnamon stick, and 1/2 cup of chopped flat leaf parsley.
8.Cover the pot and let the mixture simmer on low heat for about 45 minutes.
9.After 45 minutes, add 4 peeled and cut russet potatoes and continue to simmer the mixture for another 30-45 minutes, or until the chicken is cooked through and the potatoes are tender.
10.Remove the bay leaves and cinnamon stick before serving.
