Ingredients

8 ounces ricotta cheese or 8 ounces cottage cheese
8 ounces feta cheese , crumbled
3 eggs , lightly beaten
3 tablespoons finely chopped fresh parsley
salt & freshly ground black pepper
3/4 lb phyllo dough ( about 20 sheets )
1/2 lb butter , melted

Instructions

1.Preheat the oven to 350F.

3.Take one sheet of phyllo dough and brush it with melted butter. Layer another sheet of phyllo on top and brush it with butter again. Repeat until you have layered 8 sheets of phyllo dough in total.
4.Cut the layered phyllo dough into 16 squares.
5.Place a spoonful of the cheese mixture onto each square.
6.Fold the square over to form a triangle and press the edges together to seal the filling inside.
7.Repeat this process with the remaining squares of phyllo dough and cheese mixture until everything is used.
8.Place the triangles on a baking sheet and brush the tops with melted butter.
9.Bake at 350F for 20-25 minutes or until the pastries are golden brown and crispy on the outside.
