Ingredients

1 lb eggplant
1/2 cup all-purpose flour
1 teaspoon baking powder
1 large egg , beaten to blend
1 tablespoon grated onion
1 clove garlic , minced
3/4 cup grated kefalograviera cheese ( use Parmesan as a substitute )
1/2 cup minced parsley
tzatziki ( you can find this in my recipes )
Melitzanokeftedes are a classic Greek dish consisting of roasted eggplant formed into small fritters with cheese, parsley, and other ingredients mixed in. These crispy fritters are often enjoyed as an appetizer or snack and can be served with a variety of sauces, but tzatziki is a classic pairing. The eggplant gives the fritters a slightly sweet and smoky flavor and the cheese adds a salty and savory contrast. Instructions

1.Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2.Use a fork to prick the eggplant all over and place on prepared baking sheet. Roast in preheated oven for 45 minutes or until very soft.
3.Remove from oven and let cool slightly, then scoop the flesh out of the eggplant and into a large bowl.
4.Add the flour, baking powder, egg, onion, garlic, cheese, and parsley to the bowl and stir until well combined.
5.Form the mixture into small patties with your hands and place on a plate.
6.Heat a large non-stick skillet over medium heat and add enough oil to just coat the bottom.
7.Add the patties to the skillet and fry until crispy and golden brown, about 3-4 minutes per side.
8.Serve warm with tzatziki.
