2 small boiling onions , chopped
1/4 cup pine nuts
1/4 cup fresh lemon juice
1 tablespoon minced fresh dill
1 1/2 teaspoons minced of fresh mint ( optional )
1 cup crumbled feta
1 lemon , cut in 8 wedges

Instructions

1.Spray rice cooker with cooking spray. Rinse rice.
2.Add rice and chicken stock to rice cooker. Mix well. Cook until rice is done.
3.While rice cooks, heat olive oil in a skillet over medium heat. Add onions and cook until softened.
4.Add pine nuts and cook until lightly browned.
5.Add lemon juice, dill, and mint (if using) to skillet. Mix well.
6.When rice is done, fluff with a fork. Add onion mixture and feta to rice. Mix well.
7.Serve with lemon wedges.
