Ingredients

1 cup rice
1 medium onion , finely chopped
1/3 cup olive oil
2 cups boiling water or 2 cups chicken broth
1 1/2 teaspoons salt
1 lb fresh spinach

Instructions

1.Soak the rice in water for about 15 minutes.
