4 eggs , lightly beaten
2 packages frozen chopped spinach , thawed and squeezed dry
1 cup crumbled feta cheese
1/2 cup 1 % fat cottage cheese
3 green onions , sliced
1 teaspoon dill weed
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
10 sheets phyllo dough
butter-flavored cooking spray ( I Ca n't Believe It 's Not Butter works well )
3 large tomatoes , sliced
nonstick cooking spray

Instructions

1.Preheat oven to 375°F (190°C).
2.In a large mixing bowl, mix together eggs, spinach, feta cheese, cottage cheese, green onions, dill weed, salt, pepper, and nutmeg until well combined.
3.Spray an 8-inch (20 cm) square baking dish with nonstick cooking spray. Lay 1 sheet of phyllo dough into the dish, allowing excess dough to hang over the sides. Spray with butter-flavored cooking spray. Continue layering with remaining phyllo dough, spraying each layer.
4.Spread egg mixture over the top of the dough. Layer sliced tomatoes over the mixture. Fold the excess dough over the tomatoes. Spray with cooking spray.
5.Bake for 35-40 minutes or until golden brown. Let sit for 5 minutes before serving.
