Ingredients

1/2 cup butter
1/2 cup onion , diced
1 bag fresh spinach , rinsed , well drained and chopped or ( 10 ounce ) package frozen spinach , thawed and well drained
1/2 cup ricotta cheese
1/2 cup feta cheese , crumbled
1 egg , slightly beaten
1/8 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon pepper
4 sheets phyllo dough
1/4 cup dried unflavored breadcrumbs
Spanakopita is a traditional Greek dish that is typically served as an appetizer or main course. Instructions

1.Preheat oven to 375°F (190°C).
2.In a large bowl, mix together butter and onion until onions are soft.
3.Add in chopped spinach, ricotta cheese, feta cheese, egg, salt, nutmeg and pepper to the bowl and mix well.
4.Grease a 9x13 inch baking dish and layer phyllo dough one sheet at a time, brushing each one with butter before adding the next. Sprinkle breadcrumbs between the layers.
5.Spread the spinach and cheese mixture over the top layer of phyllo dough.
6.Repeat step 4 with remaining phyllo dough sheets on top of the spinach and cheese mixture, brushing each layer with butter as before. Cut off any excess dough hanging over the sides of the dish.
7.Bake for 30-35 minutes or until golden brown on top. Let it cool for 10 minutes before slicing and serving.
