Italian Buttercream is a classic frosting used in many Italian desserts such as Tiramisu or Cannoli. It is made by combining sugar syrup with whipped egg whites and butter or shortening to create a rich and silky texture. This recipe calls for both butter and shortening to balance the flavor and texture of the frosting. When done correctly, Italian Buttercream is a crowd-pleaser with its creamy and buttery taste.

Instructions

.In a medium saucepan, combine the sugar, corn syrup, and water.
.Heat over medium-high heat, stirring constantly, until the sugar has dissolved.
.Increase the heat to high and let the mixture come to a boil without stirring.
.In the meantime, beat the egg whites in a large bowl until they form stiff peaks.
.When the sugar syrup has reached a temperature of 245°F, slowly pour it into the egg whites while beating constantly.
.Continue to beat the egg whites until the mixture cools to room temperature.
.Gradually add in the chilled butter and shortening, continuing to beat until the buttercream is creamy and smooth.
.Stir in the vanilla extract.
.Use immediately, or store in an airtight container in the fridge for up to a week.
