4 -6 tablespoons olive oil
3 medium onions , chopped

1 can tomato paste
1 large bay leaf
1 can whole tomatoes , undrained
1 cup dry red wine ( can use a little more wine )
1/2 - 3/4 cup currants
2 tablespoons brown sugar
2 teaspoons cumin
1 -2 teaspoon grated orange rind
1 cinnamon stick
1/4 cup chopped fresh parsley
salt & fresh ground pepper ( to taste )

Instructions

1.Heat olive oil in a large pot over medium-high heat.

6.Remove cinnamon stick and bay leaf before serving.
