Ingredients

2 tablespoons olive oil
1 large onion , finely chopped
2 garlic cloves , finely chopped
1 lb ground lamb
1 can plum tomatoes , chopped
2 tablespoons tomato paste
2 teaspoons ground cinnamon
7 ounces roasted eggplant packed in oil , drained and chopped
7 ounces feta cheese , crumbled
3 tablespoons of fresh mint , chopped
Moussaka is a traditional dish from the Eastern Mediterranean region and is a popular Greek dish. Instructions

1.First heat the olive oil in a large saucepan over medium-high heat.
2.Add in the chopped onion and garlic, then cook for 5 minutes until the onion is soft.
3.Once softened, add in the ground lamb and cook for a further 5 minutes or until browned.
4.Stir in the can of chopped tomatoes, tomato paste, and the ground cinnamon.
5.Let the mixture simmer for around 10 minutes, until the sauce has thickened.
6.Once the sauce has thickened, stir in the chopped roasted eggplant and continue to cook for a further 5 minutes.
7.Take the pan off the heat and stir in the crumbled feta cheese and chopped fresh mint.
8.Serve the moussaka hot and enjoy!
