Ingredients

1 kg tripe , beef
1/2 cup olive oil
2 onions , cut in chunks
3 garlic cloves , chopped
1 1/2 teaspoons tomato paste
1/4 cup red wine
water
500 g tomatoes , chopped
1 bay leaf
2 sticks cinnamon
4 whole cloves
fresh ground black pepper
sea salt
Patsas is a traditional Greek soup made with tripe, a type of meat that comes from the stomach lining of cows, sheep, or pigs. Instructions

1.Rinse the tripe and cut it into bite-sized pieces.

4.Add the red wine and stir until the alcohol evaporates.
5.Add the tripe and enough water to cover it completely. Bring to a boil over high heat.
6.Reduce the heat to low and let it simmer for 1-2 hours, until the tripe is tender.
7.Add the chopped tomatoes, bay leaf, cinnamon sticks, cloves, ground pepper, and sea salt.
8.Cover and let it simmer for an additional 30-45 minutes.
9.Remove the cinnamon sticks, bay leaf, and cloves. Serve hot with bread.
