Ingredients

1 medium eggplant
1/4 cup olive oil
2 tablespoons butter
1 cup onion , chopped
2 garlic cloves , crushed
1 can tomatoes , diced
1/2 cup parsley , chopped
1/4 cup lemon juice
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup feta cheese , crumbled

Instructions

1.Preheat your oven to 375F
2.Cut the eggplant into slices about 1/4-inch thick, or into the desired shape.
3.Salt both sides of the eggplant slices and set them aside to drain for about an hour.
4.Meanwhile in a saucepan, melt the butter in the olive oil over low heat. Add onions, garlic and cook until soft. Add the tomatoes, parsley, lemon juice, nutmeg, salt and pepper.
5.Rinse the eggplant and pat dry. Spread a layer of sauce in the bottom of a baking dish, then add a layer of eggplant slices on top. Repeat until all the eggplant is used, finishing with a layer of sauce on top.
6.Add the crumbled feta cheese on top.
7.Bake for 45-50 minutes, or until the eggplant is tender and the cheese is melted and golden, let it cool for a few minutes before serving.
