1 egg , lightly beaten

2 lbs ground beef or 2 lbs ground lamb

Instructions

1.Preheat oven to 375ºF (190ºC).
2.In a large mixing bowl, combine the lightly beaten egg, plain yogurt, minced onion, dry breadcrumbs, snipped fresh oregano, snipped fresh mint, minced fresh lemon zest, and minced garlic cloves. Mix until well combined.
3.Add in the ground beef or lamb, and crumbled feta cheese. Mix well until evenly combined.
4.Transfer the mixture to a 15 x 10 x 1 inch baking pan and form it into a loaf shape.
5.Top with thinly sliced roma tomatoes, and lemon wedges.
6.Bake in preheated oven for 45-55 minutes, or until internal temperature reaches 160ºF (71ºC).
7.Serve hot with chopped cucumber, feta cheese, and fresh mint alongside.
8.For Herbed Potatoes, in a separate large bowl, toss together the sliced red potatoes, olive oil, snipped fresh rosemary, salt and pepper. Spread the potatoes in a greased 15x10x1 inch baking pan. Bake in preheated oven at 375ºF (190ºC) for 40-45 minutes, or until tender when pierced with a fork and golden brown in color. Serve warm with the Mediterranean Meatloaf.
