2 tablespoons garlic , minced
1/2 cup red wine
1 tablespoon beef bouillon powder
1 1/2 teaspoons cinnamon
1 -2 tablespoon fresh oregano , parsley and rosemary , chopped
1 can diced tomatoes
1 large eggplant
2 large russet potatoes
1/4 cup flour
1/4 cup butter
3 cups milk
2 eggs , lightly beaten
1 cup aged cheddar cheese , shredded
1 cup mozzarella cheese , shredded
salt and pepper

Instructions

1.Preheat oven to 375F.
2.Preheat a large saucepan to medium-high heat.

4.Pour off any extra fat and add onions to the beef.
5.Cook and stir until they are soft.
6.Add garlic, red wine, beef bouillon powder, cinnamon, oregano, parsley, rosemary, and tomatoes to the saucepan.
7.Stir everything together and bring to a boil.
8.Reduce heat and let it simmer for about 20 minutes.
9.Meanwhile, slice potatoes and eggplant into 1/4-inch thickness. Sprinkle salt and let it sit for 10 minutes.
10.Rinse with cold water and let it dry.
11.Melt butter in a saucepan over medium heat until it starts to foam.
12.Add flour and stir constantly for a minute.
13.Slowly pour in the milk, whisking constantly.
14.Keep stirring until it starts to thicken, about 8 minutes.
15.Take it off the heat and whisk in the lightly beaten eggs, cheddar cheese, and mozzarella cheese.
16.Season with salt and pepper as needed.
17.Layer the eggplant and potatoes in a greased 9x13 inch baking dish.
18.Pour the beef mixture over the potatoes and eggplant.
19.Pour the cheese sauce on top.
20.Bake in the preheated oven for about an hour, or until it looks golden brown and bubbling.
