Ingredients

700 g lean ground beef
1/2 teaspoon minced garlic clove
1 tablespoon dried oregano
5 large eggs
salt & pepper ( to taste )
8 cups water
7 teaspoons chicken stock
115 g dill ( I use a tube of dill paste )
1 large onion ( peeled & roughly chopped )
3 large carrots ( peeled & roughly chopped )
2 zucchini ( roughly chopped )
1/3 cup risoni ( small rice shaped pasta )
1/2 cup fresh lemon juice
Egg and Lemon Soup is a traditional Greek soup that is known for its tangy and creamy taste. Instructions

1.In a large soup pot, brown the ground beef over medium heat.
2.Add in the chopped onions and minced garlic and cook until the onions are translucent.
3.Add in the water, chicken stock, carrots, and zucchini and bring to a boil.
4.Reduce heat and simmer for 10-15 minutes or until the vegetables are tender.
5.Add in the risoni and dill paste and cook for another 5-7 minutes.
6.In a separate bowl, whisk together the eggs and lemon juice.
7.Temper the eggs by adding in a ladleful of the hot soup, whisking constantly.
8.Slowly pour the egg mixture into the soup pot while stirring.
9.Cook for an additional 2-3 minutes until the soup has slightly thickened.
10.Season with salt and pepper to taste and serve hot.
