Ingredients

1 1/2 lbs ground beef
1 1/2 lbs ground pork
1 cabbage , outer leaves discarded ( approx 2 lbs )
3 tablespoons olive oil
3/4 cup short-grain rice
1 1/2 cups minced onions
1 cup carrot , grated
1/2 cup minced parsley
1/2 cup minced celery
1 tablespoon tomato paste
1 garlic clove , minced very fine
2 tablespoons minced spearmint ( or 1 tblsp dried , rubbed )
2 beef bouillon cubes
1/2 cup olive oil
2 tablespoons butter
salt and pepper
2 eggs
2 tablespoons cornflour
2 lemons , juice of

Instructions

1.Preheat oven to 375°F.
2.Core cabbage and place it in a large pot of boiling salted water.
3.Boil the cabbage for 3 minutes, or until some of the leaves are tender enough to bend.
4.Remove cabbage from the pot and let it cool.
5.Carefully remove the rest of the leaves, and chop them into small pieces.
6.In a large pot, heat olive oil over medium heat, then add onions, carrots, celery, parsley, tomato paste, garlic, and spearmint.
7.Cook until vegetables are tender.
8.Rinse the rice under cold water, drain it, and add it to the pot, along with the ground beef and pork. Mix everything together.
9.Add beef bouillon cubes and 3 cups of water. Season the mixture with salt and pepper.
10.Simmer for 30 minutes.
11.In a bowl, beat eggs well and mix with cornflour. Add lemon juice and stir well.
12.When the mixture is cooled, add the egg mixture and stir well.
13.In a large baking dish, layer cabbage leaves, then the mixture, and continue alternating layers until all the ingredients are used.
14.Mix lemon juice, olive oil, and butter and add enough boiling water to come within an inch of the top of the rolls.
15.Cover with aluminum foil and bake for 1 and ½ hours or until rice is cooked through.
