1 onion , chopped
3 cloves garlic , finely chopped
1 carrot , chopped
2 celery ribs , chopped

1 1/2 pounds red snapper fillets , cut into 2 inch pieces
1/2 cup white vinegar

3 cups fish stock
1 pound clams in shell , scrubbed
1/2 pound medium shrimp , with shells
6 slices Italian bread , toasted

Brodetto is a rustic dish that has been enjoyed by Italian fishermen for centuries. It’s made by simmering fresh seafood in a rich tomato broth flavored with garlic, parsley, and red pepper flakes. Instructions

1.In a large Dutch oven or soup pot, heat the olive oil over medium heat. Add onion, garlic, carrot, and celery; cook until vegetables are beginning to soften, about 10 minutes.
2.Add the bay leaves, chopped parsley, and red pepper flakes to the pot. Stir until fragrant, about 1 minute.
3.Add the mashed canned tomatoes to the pot and stir well to combine all the ingredients.
4.Add the red snapper fillets to the pot, along with the white vinegar, salt, and black pepper. Toss everything together, gently, until the fish is coated.
5.Pour in the fish stock and add the clams. Cover the pot and cook for 10 minutes or until the clams start to open.
6.Add the shrimp to the pot and stir everything together. Cook for another 5 minutes, or until the shrimp and snapper are cooked through.
7.Season the stew with salt and black pepper to taste.
8.Serve the brodetto hot, with toasted Italian bread on the side to soak up the delicious broth.
