1/4 cup red onion , diced

Instructions

1.Rinse quinoa under cold running water and drain well.
2.In a medium pot, combine quinoa, 2 cups of water, and salt. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until quinoa is tender and the liquid is absorbed. When done, remove from heat and let cool.
3.In a small bowl, whisk together lemon juice, red wine vinegar, salt, and olive oil. Set aside.
