8 chicken thighs , skinless , boneless
1 tablespoon honey
2 tablespoons lemon juice
2 tablespoons natural yogurt
4 tablespoons of fresh mint , chopped
salt and pepper

Instructions

1.Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.
2.Put the chicken thighs into a single layer in a baking dish.
3.In a small bowl, mix together the honey, lemon juice, yogurt, and half the chopped mint.
4.Season the chicken with salt and pepper and pour the yogurt mixture over the top, turning the pieces over to coat them completely.
5.Place the dish in the oven and bake for 35-40 minutes, until the chicken is cooked through and the juices run clear when pierced with a fork.
6.Sprinkle the remaining mint over the top and serve immediately.
