Ingredients

9 ounces halloumi cheese
6 tablespoons seasoned flour
7 ounces mixed salad greens
1 ripe mango , peeled , stoned and sliced
1 tablespoon mint , finely chopped
5 fluid ounces natural yoghurt
1/2 lemon , juice only
salt & freshly ground black pepper
3 tablespoons peanut oil
4 ounces cherry tomatoes , halved
mint leaf , to garnish

Instructions

1.Spread the seasoned flour out on a plate. Cut the halloumi into even slices around 1cm thick, then coat each slice in the flour, shaking off any excess.
2.Heat a wok or frying pan over high heat until it's smoking hot. Add the peanut oil, then add the halloumi slices.
3.Cook the halloumi for around 1 minute on each side, or until the cheese is golden brown and crispy. Remove the halloumi from pan and set aside.
4.In a bowl, whisk together the natural yoghurt, lemon juice, and chopped mint.
5.Place the salad greens, sliced mango, and halved cherry tomatoes in a large salad bowl and drizzle over the yoghurt dressing. Toss everything together and arrange the halloumi slices on top of the salad.
6.Garnish with fresh mint leaves and enjoy!
