Ingredients

4 - 4 1/2 cups all-purpose flour
1 cup whole wheat flour
3/4 cup grated carrot
1/4 cup firmly packed brown sugar
2 packages fast rising yeast
2 teaspoons ground cinnamon
1 1/2 teaspoons salt
1 cup water
1/3 cup milk
1/4 cup butter or 1/4 cup margarine
2 large eggs
3/4 cup chopped dates
1 egg white , lightly beaten
1 cup powdered sugar , sifted
1 -2 tablespoon milk
2 teaspoons butter , melted or 2 teaspoons margarine
sliced almonds ( to garnish )

Instructions

1.In a large bowl, combine 2 cups all-purpose flour, whole wheat flour, grated carrot, brown sugar, instant yeast, cinnamon, and salt. Mix well.
2.In a saucepan, heat the water, milk, and butter/margarine until the butter/margarine is melted. Cool to 120-130°F.
3.Add the liquid mixture to the flour mixture. Beat for 2-3 minutes with an electric mixer on medium speed. Add eggs and chopped dates. Beat well.
4.By hand, stir in enough all-purpose flour to make a soft dough. The dough should stick to your fingers but pull away clean from the bowl.
5.Place the dough onto a floured board and knead for 5-6 minutes. Divide into 16 equal pieces. Shape into rolls and place in a greased 9x13-inch pan.
6.Cover the pan and let rise for 20-30 minutes. Brush with egg white.
7.Bake at 375°F for 25-30 minutes or until done. Cool on a wire rack.
8.In a small bowl, mix powdered sugar, milk, and butter/margarine to make icing. Drizzle over the rolls. Sprinkle with sliced almonds.
