Ingredients

3 eggplants
1 cup all-purpose flour
1/4 cup olive oil
2 tablespoons butter or 2 tablespoons margarine
2 cups chopped onions
2 garlic cloves , finely chopped
1 cup sliced mushrooms
1 cup pignoli nuts or 1 cup slivered almonds
1 1/2 lbs ground lean lamb
2 cups fresh breadcrumbs
2 cups peeled diced tomatoes
1 tablespoon salt
2 teaspoons oregano
1/2 teaspoon black pepper
Moussaka on the Half Shell is a traditional Greek dish that's perfect for those who love eggplant and Mediterranean flavors. It's made with sliced and pan-seared eggplants stuffed with a savory mixture of ground lean lamb, onions, mushrooms, and nuts. Instructions

1.Preheat your oven to 375 degrees F.
2.Slice eggplants lengthwise into 1/4 inch width pieces and dust with flour.
3.Heat oil in a large frying pan and sauté eggplant until lightly browned.
4.Remove eggplant from pan and place in a single layer on a baking sheet.
5.In another pan, melt butter and sauté onions and garlic until softened.
6.Add in mushrooms and nuts and cook for 10 minutes until nuts are toasted.
7.Add in lamb, breadcrumbs, tomatoes, salt, oregano and black pepper. Cook until meat is browned.
8.Place eggplant shells on a baking sheet. Spoon filling into eggplant shells and bake in the oven for 30 minutes.
