Instructions

1.Preheat oven to 375°F (190°C).
2.Halve grape tomatoes and shred fresh basil. Press garlic cloves and add them into a mixing bowl with halved tomatoes.
3.Add balsamic vinegar, salt, and pepper to taste into the same mixing bowl. Mix well.
4.Cut eggplant into thin rounds. Brush them with olive oil or canola oil.
