3/4 teaspoon salt
1/4 teaspoon black pepper
2/3 cup unseasoned breadcrumbs
1 container fat-free ricotta cheese
8 ounces feta cheese , crumbled
1/2 cup egg substitute

Instructions

1.Preheat oven to 375°F. Grease a 9”x 13” baking dish.
2.Heat oil in a large non-stick skillet over medium-high heat. Add peppers and sauté for 5 minutes.
3.Add ground turkey and onion to skillet. Cook until turkey is browned.
4.Add canned tomatoes, tomato paste, cinnamon, salt, and pepper. Stir until combined.
5.Bring the mixture to a simmer and cook for 10 minutes.
6.In a small bowl, combine breadcrumbs, ricotta cheese, and egg substitute. Mix well.
7.Add half of the turkey mixture to the prepared baking dish. Layer half of the feta cheese on top of the turkey mixture.
8.Spoon half of the breadcrumb mixture over the feta cheese.
9.Layer the remaining turkey mixture on top of the breadcrumb mixture. Layer the remaining feta cheese on top of the turkey mixture.
10.Spoon the remaining breadcrumb mixture over the feta cheese.
11.Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes or until the top layer is golden brown. Serve hot.
