A famous Middle Eastern delight, spiced lamb triangles, are known for their exotic flavors and irresistible aroma. Mostly served as appetizers or finger-foods on special occasions, these small triangular-shaped parcels are made of phyllo pastry stuffed with tender minced lamb that's been seasoned with a blend of aromatic spices. They're a great pick-me-up for any party, and their appeal lies in their crispy crust and aromatic blend of cumin and cinnamon. It's best served with a dollop of hummus or tzatziki.

Instructions

.Preheat your oven to 375°F (190°C).
.In a mixing bowl, whisk together the lemon juice, garlic, parsley, raisins, allspice, cinnamon, cumin, egg white, and black pepper until well combined.
.Add the ground lamb to the mixing bowl and mix all the ingredients together.
.Heat the olive oil in a large skillet over medium heat. Once hot, add the onion, pine nuts, and poppy seeds and sauté for about five minutes or until the onion turns translucent.
.Add the chicken broth and salt and cook for another 2 minutes.
.Add the lamb mixture to the skillet and cook for 5 to 7 minutes or until the lamb is cooked through.
.Remove from heat and let it cool down.
.Place one phyllo sheet onto a clean work surface and brush with melted butter or olive oil.
.Add another phyllo sheet on top of the previous one and brush again with butter/oil. Repeat this process, stacking 4 more phyllo sheets on top of each other.
.Cut the stacked phyllo into three strips of equal size and scoop a tablespoon of the lamb mixture onto the bottom left corner of each strip.
.Fold the corner up, to form a triangle shape, then continue to fold the strip in a triangle shape to the end. Brush the triangle with butter and place it on a nonstick cookie sheet.
.Repeat the process with the remaining two sheets, making sure that each triangle maintains an even size.
.Bake the lamb triangles for 15 to 20 minutes or until the phyllo is golden and crispy. Serve hot or cold.
