10 cm orange zest , long strip
1 tablespoon honey
1 bay leaf
1 teaspoon ground cumin
900 g beef chuck , cut into 3 cm chunks
1 tablespoon olive oil
450 g white pearl onions , halved
1 teaspoon sugar
1/4 cup chopped flat leaf parsley

Instructions

1.In a large bowl, combine diced tomatoes, red wine vinegar, beef stock, olive oil, garlic, cinnamon sticks, orange zest, honey, bay leaf, and ground cumin.
2.Add beef chunks and toss to coat. Marinate for 2 hours or overnight.
3.In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.
4.Add pearl onions and sugar, stirring occasionally, until browned.
5.Add beef mixture and marinade to the pot, bring to a boil and then reduce heat to low.
6.Cover and simmer for 2-3 hours, stirring occasionally.
7.Remove cinnamon sticks, bay leaf, and orange zest strip.
8.Serve hot, sprinkled with chopped parsley on top.
