8 spinach leaves ( more or less )
1/4 cup parmesan cheese , grated
2 tablespoons olive oil
salt
pepper
1/2 cup orange juice
1/2 cup chicken broth
spices ( your favorite spice blend , we used Paul Prudhomme 's Poultry Magic )

Instructions

1.Preheat oven to 375°F.
2.Butterfly the chicken breasts.
3.Spread the hummus inside each chicken breast and place 4 spinach leaves on top.
4.Sprinkle each chicken breast with grated parmesan cheese.
5.Close the chicken breast so the hummus and spinach are inside, and secure with toothpicks.
6.Drizzle 1 tablespoon olive oil on each chicken breast, and season both sides with salt and pepper.
7.In a bowl, mix together the orange juice, chicken broth, and your favorite spices.
8.Heat the remaining tablespoon of olive oil in a skillet over medium-high heat.
9.Sear the chicken breasts for about 2-3 minutes on each side.
10.Pour the orange juice mixture into the skillet and stir to combine.
11.Transfer the skillet to the preheated oven and bake for 20-25 minutes, until chicken is cooked through.
