1/2 cup original Bisquick baking mix
1/2 cup milk
2 eggs

Instructions

1.Preheat oven to 375°F.
2.In large skillet, cook beef and onion over medium-high heat, stirring occasionally, until beef is browned and onion is tender. Drain, removing any excess grease.
3.Stir red pepper flakes, roasted red peppers, and feta cheese into beef mixture.
4.In medium bowl, whisk together Bisquick mix, milk, and eggs until blended.
5.Spray 12 regular-size muffin cups with cooking spray. Spoon beef mixture evenly into muffin cups, filling each about 2/3 full. Pour Bisquick mixture over beef mixture in muffin cups.
6.Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes; remove from muffin cups. Serve warm or cool.
