Koftas, or meatballs, are popular in many Middle Eastern and Mediterranean countries. They are usually made with ground lamb or beef, but this recipe uses ground chicken for a lighter option. Chicken koftas are easy to make and a perfect family-friendly meal. They are versatile and go well with a variety of side dishes, such as rice, couscous, or roasted vegetables. The cucumber yogurt dip adds a tangy and creamy touch to the dish, making it more flavorful and appealing. This recipe is a must-try for anyone who likes Mediterranean cuisine with a healthy twist.

Instructions

1.Preheat the grill to medium-high heat.
2.In a large mixing bowl, combine ground chicken, diced onion, chopped parsley, salt, and pepper. Mix until well combined and form small meatballs or koftas.
3.Brush the koftas with vegetable oil and place them on a greased grill. Grill for about six to eight minutes or until cooked through.
4.While the chicken koftas are cooking, make the cucumber yogurt dip. Mix Greek yogurt and finely diced cucumber in a small mixing bowl. Add salt and pepper to taste.
5.Warm the pita bread in the microwave or on the grill for about 30 seconds. Cut them in half and stuff each half with a slice of tomato, a few mint leaves, and two or three chicken koftas. Top with cucumber yogurt and serve immediately.
