2 large green bell peppers
5 medium zucchini small zucchini

2 cups long-grain rice
1 tablespoon long-grain rice
1 teaspoon salt
1/2 teaspoon pepper
1 cup olive oil
3 tablespoons water

Instructions

1.Preheat the oven to 375°F.
2.Cut off the tops of the tomatoes, peppers, and eggplants and scoop out the insides. Salt insides to remove excess water. Place them in a baking dish.
3.Peel and cut the potatoes and the small zucchini into small cubes and put them in a bowl.
4.Wash the rest of the zucchini and cut them into medium-sized cubes before mixing everything in the bowl with 1 cup of olive oil, finely chopped parsley, grated onion, salt, and pepper.
5.Rinse rice twice in cold water and then boil together with 3 tablespoons of water and a teaspoon of salt until it tosses slightly and then add to the bowl of vegetables.
6.Fill the vegetables with the rice and vegetable mixture (3/4 of fullness at most because it may burst after cooking), and put the tops back on.
7.Bake for about 1 hour in preheated ovenCover with an aluminum foil and when it's finished cooking, take off the foil, put some cheese on the top, and bake for another 10-15 minutes.
