Ingredients

4 lbs lamb shoulder , cut into 6-8 pieces , trimmed of fat
1/4 cup olive oil
1 large onion , chopped
2 garlic cloves , chopped
2 cups water
2 cups dry white wine
salt and pepper , to taste
4 -5 romaine lettuce , lettuces leaves separated and washed , cut crosswise into 2-inch thick pieces ( Swiss Chard can also be used in place of lettuce )
1/2 cup fresh dill , minced ( please do n't even think of using dried )
2 eggs
2 tablespoons cornstarch
1 1/2 lemons , juice of
An extremely popular dish in Greek cuisine, the Fricassee of Lamb has gained substantial notoriety for its delicate flavors and rich aromas. Instructions

1.Preheat your oven to 375°F.
2.In a heavy-bottomed dutch oven, heat olive oil over medium-high heat.
3.Add the lamb to the pot and brown on all sides for about 7-8 minutes.
4.Remove the meat from the pot and set aside.
5.Add the onion and garlic to the pot and sauté until golden brown.
6.Stir in the wine and water to deglaze the pot, and scrape the brown bits from the bottom using a wooden spoon.
7.Return the lamb to the pot and season with salt and pepper.
8.Bring the mixture to a boil and then reduce the heat to a simmer, cover the pot and put it in the oven.
9.Bake for 1 hour until the lamb is fork-tender.
10.In a small mixing bowl whisk together cornstarch and 1/2 cup of water. Add it to the lamb mixture and stir for 5 more minutes until the sauce is thickened.
11.In a separate mixing bowl, whisk together the eggs and lemon juice. Add the egg mixture to the lamb and stir for 2 more minutes.
12.Remove from heat and sprinkle with fresh dill.
13.Serve hot over lettuce leaves or Swiss chard.

PROS
