1 kg tsakoniki eggplant
1/2 kg tomatoes , ripe , chopped
1 tablespoon basil , finely chopped
6 garlic cloves , finely chopped
250 g feta cheese
salt
pepper
breadcrumbs , Double-baked ( optional )

Instructions

1.Cut the eggplant into 1/2 inch rounds, sprinkle with salt and set aside in a colander to remove excess water for about 1 hour.
2.Preheat your oven to 375°F.
3.Rinse the eggplant and pat dry with a paper towel.
4.Place the eggplant in a large baking dish.
5.Mix the chopped tomatoes, basil, and garlic, and sprinkle over the eggplant.
6.Season with salt and pepper, and crumble feta cheese over the top.
7.If desired, sprinkle breadcrumbs on top.
8.Bake for 40-50 minutes or until the eggplant is tender and the cheese is golden brown. Let it cool for a while before serving.
