Ingredients

3 tablespoons olive oil
1 large onion , chopped
1 bunch green onion , chopped
2 garlic cloves , minced
2 lbs spinach , rinsed and chopped
1/2 cup chopped fresh parsley
2 eggs , lightly beaten
1/2 cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
1/4 cup olive oil

Instructions

1.Preheat the oven to 375°F.

4.Add spinach and parsley to the skillet, and cook until the spinach is wilted. Remove from heat and let cool.

6.Add cooked spinach mixture to the cheese and egg mixture, mix well.
7.Brush a 9-inch pie pan with olive oil. Layer 8 sheets of phyllo dough, brushing each layer with olive oil before adding the next.
8.Spoon the spinach and cheese filling into the pie pan.
9.Fold the overhanging phyllo dough inwards onto the filling and brush with olive oil.
10.Score the top of the pie with a sharp knife into portions.
11.Bake for 35-40 minutes or until golden brown.
12.Let it cool for 10 minutes before slicing and serving.
