Ingredients

1 1/2 lbs ground beef
4 soft hoagie rolls
2/3 cup plain yogurt
1 tablespoon all purpose Greek seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup tomatoes , chopped
1 cup chopped cucumbers or 1 cup sliced cucumber
1/4 cup kalamata olive , chopped
1/3 cup plain fat-free yogurt
2 ounces feta cheese , crumbled
1 1/2 teaspoons all purpose Greek seasoning
1/4 teaspoon black pepper
Greek Meatball Subs are a twist on a classic sandwich, packed with Greek flavors and loaded with protein. Ground beef is seasoned with a blend of Mediterranean spices, then baked into tender meatballs. Topped with a tangy Greek yogurt sauce and fresh veggies, this sandwich is a delicious and healthy way to mix up your lunch or dinner routine.

Instructions

1.Preheat oven to 350 degrees.
2.In a large bowl, combine ground beef, 1 tablespoon Greek seasoning, salt, and black pepper.
3.Roll mixture into meatballs, about 2 tablespoons each.
4.Place on a baking sheet lined with parchment paper.
5.Bake for 20-25 minutes until they are cooked through.
6.While the meatballs are cooking, prepare the Greek yogurt sauce by stirring together the yogurt, feta cheese, 1 1/2 teaspoons Greek seasoning, and black pepper.
7.Cut the hoagie rolls in half and warm slightly in the oven.
8.When meatballs are done, remove from oven and place 3-4 in each hoagie roll.
9.Spoon the Greek yogurt sauce over the meatballs, and top with chopped tomatoes, cucumber, and olives.
