Ingredients

2 tablespoons olive oil
1 1/2 lbs ground lamb
1 tablespoon fresh oregano , finely chopped
4 garlic cloves , minced
1 onion , chopped
1 fresh bay leaf
1 cinnamon stick
1 small red chili pepper , finely chopped
3 tablespoons tomato paste
1 cup dry red wine
1 1/2 cups whole milk
nutmeg
1 lb ziti pasta
1/2 lb Greek feta cheese , drained and finely crumbled
finely chopped parsley and of fresh mint

Instructions

1.Heat olive oil in a large, heavy-bottomed pot over medium heat.
2.Add ground lamb and sauté until browned, breaking it up into small pieces as you go.
3.Add oregano, garlic, onion, bay leaf, cinnamon stick, and chili pepper. Cook until the onions are soft and translucent.
4.Stir in tomato paste and red wine, and cook until the liquid has reduced by half.
5.Add whole milk and a pinch of nutmeg, and reduce heat to low. Let it simmer for 45-60 minutes, stirring occasionally.
6.Once the lamb ragu is done, cook the ziti in a pot of boiling salted water according to package instructions, until it is al dente. Drain and keep aside.
7.Toss the cooked ziti pasta with the lamb ragu and transfer it to a large baking dish.
8.Preheat the oven to 375°F and sprinkle feta cheese on top of the ziti and bake until the cheese is melted and bubbly.
9.Garnish with fresh chopped parsley and mint leaves before serving.
