1/4 lb feta cheese , chopped
1/2 lb small curd cottage cheese , drained
1 egg
1 teaspoon grated lemon peel
nutmeg , to taste
salt and pepper , to taste
1/2 cup melted butter ( may need more )
5 -6 sheets phyllo dough , thawed

Instructions

1.Preheat your oven to 375°F.
2.In a large mixing bowl, combine the spinach, feta cheese, cottage cheese, egg, grated lemon peel, nutmeg, salt, and pepper.
3.Melt the butter in a small saucepan over medium heat.
4.Brush one side of a phyllo sheet with melted butter, then fold it in half widthwise.
5.Brush the top of the folded sheet with butter, then place 1-2 tablespoons of the spinach/cheese mixture at the bottom edge of the sheet.
6.Fold the bottom edge of the sheet up and over the filling to form a triangle.
7.Continue folding the triangle up and over itself until the entire sheet is used up and you have a triangular pastry.
8.Brush the triangular pastry with more melted butter, then place it on a parchment-lined baking sheet.
9.Repeat steps 4-8 with the remaining sheets of phyllo dough and spinach/cheese mixture, making sure to keep the finished triangles covered with a damp cloth until ready to bake.
10.Bake the pastries for 20-25 minutes or until golden brown and crispy. Serve warm.
