Ingredients

1 -2 eggplant , sliced
1 teaspoon minced garlic
1 onion , diced
1 cup thinly sliced green beans
1 zucchini , diced
1 carrot , diced
1/2 large capsicum , diced
8 mushrooms , sliced ( cup or button )
1 bunch spinach , roughly chopped
1 teaspoon oregano
1 teaspoon basil
1 teaspoon rosemary
2 tin diced tomatoes
2 tablespoons tomato paste
2 cups soymilk ( normal cows milk can be used if desired )
4 tablespoons cornflour
1 pinch nutmeg

Moussaka is a classic Greek dish consisting of layers of eggplant, potatoes, and meat, baked in a rich, creamy sauce. This variation of Moussaka is not quite traditional and bypasses the meat. Instead, it is a vegetarian take on the recipe, employing a variety of fresh vegetables and a delicious soy milk bechamel sauce. Instructions

1.Preheat the oven to 180 C.
2.In a large skillet over medium-high heat, sauté eggplant until golden brown, then remove and set aside.
3.In the same skillet, sauté garlic and onion until tender, then add green beans, zucchini, carrot, capsicum, mushrooms, and spinach, and continue cooking until softened.
4.Add oregano, basil, rosemary, tomatoes, and tomato paste and cook until heated through.
5.In a separate saucepan, whisk together soymilk, cornflour, nutmeg, and pepper until smooth.
6.Cook on medium heat, stirring constantly, until the sauce thickens.
7.In a 9"x13" baking dish, layer half of the eggplant slices on the bottom.
8.Pour the vegetable mixture over the eggplant, and then top with the rest of the eggplant.
9.Pour the sauce over the eggplant and bake in the oven for 30 minutes.
10.Serve and enjoy!
