Ingredients

1/4 cup olive oil
1 large onion , minced
1 1/2 1 1/2 lbs lamb or 1 1/2 lbs pork ( I use pork )
3/4 cup short-grain rice
3 tablespoons chopped of fresh mint or 3 teaspoons dried mint
3 tablespoons chopped fresh dill or 3 teaspoons dried dill
salt & freshly ground black pepper
100 jarred grape leaves , packed in brine , rinsed thoroughly ( about )
1 1/2 lemons , juice of
boiling water
2 beef bouillon cubes
2 eggs
1 1/2 lemons , juice of
2 tablespoons cornflour
Dolma is a traditional Middle Eastern dish that has been enjoyed for centuries. The word 'dolma' means 'stuffed' in Turkish, and refers to any vegetable or fruit that is filled with rice, meat, or vegetables. Instructions

1.Heat olive oil in a skillet over medium heat. Add minced onion and sauté until translucent.
2.Add lamb or pork to the skillet and cook until browned, breaking it up into small pieces as it cooks.
3.Add rice, mint, dill, salt, and pepper to the skillet and stir well.
4.Rinse grape leaves thoroughly and place them in a large bowl of boiling water. Let them soak for 10 minutes to soften.
5.Remove grape leaves from boiling water and pat dry with paper towels. Cut off any stems or thick veins as needed.
6.Preheat oven to 375°F.
7.Place 1 teaspoon of the meat filling in the center of each grape leaf. Roll up the leaf from the bottom, tucking in the sides as you roll to create a compact packet.
8.Place rolled dolmas in a large baking dish, seam-side down, until the dish is full.
9.In a separate bowl, whisk together eggs, lemon juice, and cornflour. Add beef bouillon cubes and mix until fully dissolved. Gradually pour this mixture over the dolmas in the baking dish.
10.Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until the dolmas are cooked through and the top is golden brown.
