Saganaki is a dish enjoyed throughout Greece, especially in its tavernas where it is typically ordered before the main course. The dish, which is named after the shallow skillet in which it is cooked, is often made with a variety of cheeses such as feta, kefalotyri, or kasseri. My Saganaki recipe uses kasseri, a semi-hard cheese made from sheep's milk in Greece. It's a simple and rustic dish that's perfect for sharing. The cheese is dredged in flour, fried until golden brown, and then topped with an aromatic combination of ouzo, oregano, lemon, and other garnishes. The result is a hearty dish that is bursting with flavor. Best served hot with pita bread, My Saganaki will transport you to the sunny and picturesque streets of Greece in no time.

.Dredge each slice of kasseri cheese in flour, shaking off any excess.
.Heat olive oil over medium-high heat in a large skillet.
.Add the floured cheese slices and cook for 2-3 minutes on each side, until golden brown.
.Add the ouzo to the skillet, being careful of any flames.
.Sprinkle the minced oregano on top and let the cheese cook for an additional minute.
.Top the Saganaki with lemon slices, chopped tomato, and kalamata olives, and serve with pita bread.
