Ingredients

3/4 cup orzo pasta
3 tablespoons olive oil
1/4 cup canned chicken broth or 1/4 cup fresh chicken broth
4 1/2 ounces packages frozen artichoke hearts , thawed , rinsed
1 tablespoon white wine vinegar
1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
2 tablespoons fresh basil , minced
2 green onions , finely chopped
1/3 cup prosciutto , sliced , chopped
1/3 cup fresh parmesan cheese , grated ( about 1 oz . )
2 tablespoons fresh parsley , chopped
This orzo salad is a perfect dish for those warm summer days. It has a bright lemony flavor with sweet and salty notes. Instructions

1.Cook orzo pasta according to package instructions, drain and transfer to a large mixing bowl.
2.In a medium-sized pan, heat olive oil over medium heat. Add the thawed artichoke hearts and cook for 5-7 minutes, stirring frequently.
3.Pour in the chicken broth and bring to a simmer for 2-3 minutes until reduced. Remove from heat.
4.In a small bowl, mix together white wine vinegar, fresh lemon juice, and Dijon mustard. Pour over the cooked orzo and mix well.
5.Add the cooked artichokes, minced basil, finely chopped green onions, sliced and chopped prosciutto, grated parmesan cheese and chopped parsley to the mixing bowl. Toss gently to coat.
6.Serve the orzo salad chilled or at room temperature, according to your preference.
