Ingredients

1 lb egg noodles
2 ham slices ( cut into 1/2 inch cubes )
1 red bell pepper , diced
1 green bell pepper , diced
1 red onion , diced
1/2 bunch fresh parsley , chopped
5 basil leaves , chopped

8 ounces cheddar cheese ( you like it cheesier , add more than that )
8 ounces mozzarella cheese
breadcrumbs
pecorino romano cheese or kefalotiri
pepper
salt
paprika
flour
1/4 - 3/8 cup butter
2 cups milk

Instructions

1.Preheat the oven to 350°F.
2.Cook the egg noodles according to package instructions, then drain and set aside.
3.Heat olive oil in a large skillet over medium heat. Add the diced red onion, red and green bell peppers, and cubes of ham. Add salt, pepper, and paprika according to taste. Sauté for 5-7 minutes until the vegetables are tender.
4.Melt the butter in a saucepan over medium heat and whisk in the flour. Keep stirring for 2-3 minutes until the mixture starts to turn golden brown.
5.Gradually whisk in the milk and bring to a boil. Reduce the heat and let the mixture simmer for 5-7 minutes until it thickens.
6.Stir in the oregano, chopped parsley, and chopped basil, then add the cheddar and mozzarella cheese. Mix until the cheese melts.
7.Add the cooked egg noodles and the sautéed vegetables and ham in the cheese mixture. Mix well.
8.Transfer the macaroni and cheese mixture to a casserole dish. Sprinkle breadcrumbs and grated pecorino romano or kefalotiri cheese over the top of the macaroni and cheese.
9.Bake for 30-40 minutes until the top becomes golden brown and the cheese is bubbly.
