Ingredients

2 sheets frozen shortcrust pastry , thawed
1/3 cup sun-dried tomato , coarsely chopped
150 g feta cheese , crumbled
1/4 cup basil leaves , chopped
1/2 cup pitted black olives , halved
1/2 cup grated tasty cheese
2 eggs
1 cup light cream

Instructions

1.Preheat oven to 220°C. Grease a 4cm-deep, 23cm (base) quiche dish.
2.Line dish with pastry, trimming to fit. Prick base with a fork. Line pastry with baking paper. Fill with ceramic pie weights or uncooked rice. Blind-bake for 10 minutes. Remove weights and paper. Bake for a further 10 minutes, or until light golden. Remove from oven. Reduce oven temperature to 180°C.
3.Scatter tomato, feta, basil and olives over base. Top with tasty cheese. Whisk eggs and cream together. Season with pepper. Pour over cheese. Bake for 35 to 40 minutes, or until set. Stand for 5 minutes. Serve.
