Ingredients

500 g white beans , We put the beans into water , OVERNIGHT ( minimum 12hrs before cooking )
500 g carrots , sliced
1 medium bunch celery , finely chopped
salt and pepper
150 -200 ml olive oil
2 medium sized onions , chopped
2 liters hot water

Instructions

1.Drain the white beans and add them into a pot with 2 liters of hot water.
2.Add the chopped onions and olive oil to the pot.

5.Season the soup with salt and pepper and continue to cook for an additional 30-40 minutes until the beans are tender.
