Ingredients

1/2 cup unsalted butter , plus
1 tablespoon unsalted butter
1 lb Baby Spinach
1/2 lb feta , crumbled ( scant 2 cups )
1/2 teaspoon grated fresh nutmeg
10 phyllo pastry sheets , thawed if frozen
Spanakopita is a traditional Greek dish made with spinach and feta cheese, wrapped in phyllo pastry. Instructions

1.Preheat the oven to 350°F (175°C).
2.Melt 1/2 cup of unsalted butter in a large saucepan over medium heat.
3.Add the baby spinach and cook until wilted, stirring occasionally.
4.Remove the spinach from the heat and let it cool for a few minutes. Once cooled, chop it into small pieces.
5.Add the crumbled feta and nutmeg to the spinach mixture and stir until well combined.
6.Melt the remaining 1 tablespoon of unsalted butter and set aside.
7.Working with one phyllo pastry sheet at a time, brush each sheet with melted butter and place it into a 9-inch (23cm) pie dish, with the excess dough hanging over the edge of the dish.
8.Once you have layered the dish with 5 pastry sheets, add the spinach-feta filling.
9.Cover the filling with the remaining 5 pastry sheets, brushing each sheet with melted butter.
10.Fold the overhanging dough over the filling to create a crust around the edges of the dish.
11.Brush the top with the remaining melted butter.
12.Bake the spanakopita for 45-50 minutes, or until the top is golden brown.
13.Allow the spanakopita to cool for 5-10 minutes before cutting and serving.
