Tempeh Gyros with Homemade Tzatziki Sauce is a delicious take on the classic Greek gyro. This vegetarian version uses tempeh instead of the traditional meat, making it a healthier option that is still packed with flavor. Instructions

1.Preheat oven to 425°F (218°C); line a baking sheet with parchment paper.
2.In a large bowl, crumble tempeh with your hands. Add chopped garlic, dried oregano, onion powder, salt, pepper, garlic, thyme, olive oil, cinnamon, and vinegar. Stir well until the tempeh is well coated with mixture.
3.Place tempeh mixture in the center of the parchment and spread it evenly to about 1/4 inch thickness.
4.Bake for 20-25 minutes or until it becomes golden brown.
5.While the tempeh is baking, prepare the tzatziki sauce. To do this, place grated cucumber, garlic powder, chopped garlic, salt, dill weed, mustard powder, Greek yogurt, sour cream, parsley, onion powder, olive oil, vinegar, and oregano in a mixing bowl. Stir until well combined.
6.When the tempeh is done baking, remove from oven and let it sit for one minute on the baking sheet.
7.To assemble the gyros, spread some tzatziki sauce on the pita bread, add lettuce, tomatoes, and tempeh. Roll up and serve.
