2 chicken breasts

1 cucumber , seeded and diced uniformly
1/3 cup red onion , diced uniformly
2 whole tomatoes , seeded and diced uniformly
1 kalamata olives , Pitted
1/4 cup feta cheese
1/4 cup olive oil
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon parsley
1 -2 lemon , Juice of
9 pita bread ( Flatbread )
1 hummus
1 mozzarella cheese , shredded
1 avocado ( sliced or chopped )

Instructions

1.Preheat the oven to 450°F ( 230°C ).
2.In a bowl, combine the chicken, cumin, garlic powder, paprika, cinnamon, salt, and olive oil. Mix well and let it marinate for a few minutes.
3.Thread the chicken onto skewers and bake for 10-12 minutes or until fully cooked. Set aside.
4.In another bowl, mix Greek yogurt, mint, cucumber, onions, lemon juice, garlic, salt, sugar, and dill (optional) to make the tzatziki sauce. Set aside.
5.In a large bowl, mix cucumber, red onion, tomatoes, olives, feta cheese, olive oil, basil, oregano, parsley, and lemon juice. Stir well to combine.
6.Spread hummus on the pita breads and sprinkle mozzarella cheese on top.
7.Bake for 5-7 minutes or until the cheese has melted.
8.Remove from the oven and top with the chicken and cucumber salad. Drizzle tzatziki sauce over the top.
9.Serve immediately with sliced or chopped avocado.
