Ingredients

6 medium zucchini
vegetable oil cooking spray
6 tablespoons olive oil
1 large onion , chopped finely
4 garlic cloves , minced
1 lb lean ground beef
1 can tomato sauce
1 large ripe tomatoes , cut into pieces
1 banana peppers or 1 jalapeno pepper
1 bay leaf
1/4 teaspoon beau monde seasoning
1 tablespoon honey
pepper
1/4 teaspoon oregano ( dried )
10 fresh mushrooms , sliced
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 cup 2 % fat cottage cheese
1/4 cup marsala wine
1/4 cup fresh grated parmesan cheese ( use imported ) or 1/4 cup romano cheese ( use imported )
2 tablespoons fresh parsley , chopped or 2 teaspoons dried parsley
Mighty Good Moussaka is a traditional Greek dish made with layers of ground beef, sliced zucchini, and creamy cheese sauce. Instructions

1.Preheat oven to 325°F (165°C).
2.Cut zucchini into 1/4 inch slices.
3.Grease a baking sheet with vegetable oil spray and place the zucchini on it.
4.Lightly coat the zucchini with olive oil and bake for 20 minutes.
5.In a skillet over medium heat, add olive oil, onion and garlic, cook and stir until the onion is translucent and the garlic is fragrant.
6.Add beef and cook until browned
7.Stir in tomato sauce, fresh tomato, banana pepper, bay leaf, beau monde seasoning, honey, pepper, oregano, mushrooms, cinnamon, and allspice. Simmer for 15 minutes, stirring occasionally.
8.Blend cottage cheese, marsala wine, and grated cheese in a bowl until smooth.
9.Layer zucchini slices in a greased 9x13 inch baking dish.
10.Pour meat mixture over zucchini
11.Add a layer of cheese mixture
12.Repeat layers, ending with cheese
13.Bake at 350°F (175°C) until bubbly and golden brown, for about 1 hour.
14.Sprinkle with parsley before serving.
