Ingredients

1 eggplant , sliced into about 8 to 10 pieces
8 slices halloumi cheese
flour

3 tablespoons olive oil
1 garlic clove , minced very fine
1 tablespoon chopped fresh coriander leaves
1 tablespoon chopped fresh spearmint
2 teaspoons sweet chili sauce
1 small onion , finely chopped
2 teaspoons balsamic vinegar
1 teaspoon brown sugar

Halloumi and Eggplant (Aubergine) Stack is a Mediterranean-inspired dish packed with flavors and nutrients that make it a tasty and healthy dish. The grilled eggplant and halloumi cheese are layered with a tasty herb sauce made from olive oil, garlic, onions, coriander, spearmint, sweet chilli sauce, and balsamic vinegar. Instructions

1.Preheat your grill to a high heat.
2.Brush the eggplant slices with olive oil and season with salt to taste.
3.Place the slices of eggplant on the grill and cook for 3-4 minutes per side or until tender and nicely browned.
4.Dust the halloumi cheese slices with a little bit of flour.
5.Place halloumi cheese slices on the grill and cook for about 1-2 minutes on each side or until golden brown.
6.In a skillet, heat up 3 tbsp of olive oil over medium heat.
7.Add the minced garlic and chopped onion and sauté for 1-2 minutes, or until soft and translucent.
8.Add in chopped coriander and spearmint, sweet chilli sauce, brown sugar, and balsamic vinegar. Cook for 1-2 minutes or until heated through.
9.To make the stack, place one slice of grilled eggplant on a plate, top with a slice of halloumi cheese, then stack the remaining eggplant and halloumi on top.
10.Spoon the herb sauce over the stack and serve.
