Ingredients

1 lb roma tomato , halved
1 tablespoon olive oil
1 -2 teaspoon kosher salt ( to taste )
1 teaspoon fresh ground black pepper ( to taste )
1 medium onion , finely chopped
2 garlic cloves , minced
1 teaspoon hot pepper flakes ( to your taste or leave out )
1/2 cup parsley ( finely chopped )
1/2 cup fresh scallions ( finely chopped )
1 teaspoon oregano
1 teaspoon basil leaves ( finely chopped )
1/4 cup flour
1/4 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese ( optional )
Tomato patties, or domatokeftedes, are a traditional Greek dish that is perfect for a snack or appetizer. These patties are made with fresh roma tomatoes, herbs, spices, and a bit of flour and breadcrumbs to hold them together. They are then pan-fried until crispy and golden brown, and served hot. These patties are full of flavor and are a great way to use up fresh tomatoes during the summer months. They can be made ahead of time and reheated for an easy and tasty snack.

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Line a baking sheet with parchment paper.
3.Place the tomatoes on the parchment paper, drizzle with olive oil, and sprinkle with salt and pepper.
4.Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft and slightly caramelized on the edges.
5.In a large mixing bowl, combine the roasted tomatoes, onion, garlic, hot pepper flakes, parsley, scallions, oregano, basil, flour, breadcrumbs, and parmesan cheese if using. Mix well.
6.Form the mixture into small patties, about 2 inches in diameter.
7.Heat a large skillet over medium heat. Add enough oil to coat the bottom of the pan.
8.Working in batches, cook the patties in the hot skillet until crispy and golden brown on both sides, about 2-3 minutes per side.
9.Serve the patties hot, garnished with additional fresh parsley or scallions if desired.
