diced boneless skinless rotisserie-cooked chicken ( optional )
minced flat leaf parsley ( optional , to garnish )

Instructions

1.In a large soup pot, combine 3 cups chicken stock, fresh lemon juice, My Big Fat Greek Seasoning, unsalted butter, granulated sugar, finely grated fresh lemon zest, and uncooked orzo pasta. Bring to a boil and then reduce heat to a simmer.
2.In a small bowl, whisk together 2 cups reserved cold chicken stock and flour until smooth. Slowly add the mixture to the soup pot, stirring constantly until well combined.
3.In a separate bowl, whisk together eggs until frothy. Slowly pour the eggs into the soup, whisking constantly until combined and soup has thickened.
4.Optional - add diced boneless skinless rotisserie-cooked chicken. Simmer for a few more minutes to heat chicken through.
5.Garnish with minced flat leaf parsley and serve hot.
